Manual and mechanical harvesting, 100% destemmed, at perfect maturity. Traditional Bordeaux vinification, long maceration of 20 days. Fermentation in temperature-controlled vats, daily punching down and pumping over, then selective blending: only 50% of the harvest is retained. The balance becomes the second wine.
